good day to you ms. --
i'm in a conundrum. please help!
A: by tossing them on to a green salad with their favorite dressing at dinner.
Q: oh, please tell --
A: think 4 and 2. take 4 vegetables (i often choose summer squash, zucchini, tomato, scallion) x 2, chop 'em up and toss into a lovely mixing bowl. then take 2 large handfuls of fresh basil, chop 'em up, toss in. sprinkle with salt and pepper. drizzle on 2 tbsp olive oil. mix away. keep bowl chilled in refrigerator.
Q: and then what?
A: when the family has made their salad, they simply toss on a few scoops of the prepared veggies, then add their fav dressing. wah-lah=more veggies in their day.
Q: how long does this chilled bowl last?
A: there's four of us..i'll make this on monday and it will last until about thursday or friday depending on if my son has some for lunch too. so, for 4 to 5 days usually.
Q: that's clever. seems like it helps you out too..?
A: yes indeed. especially on busy weekdays when i may or may not have time (my tennis match may run longer than expected, you know) to prepare extra vegetables at dinner time.
Q: so pre-prepared vegetables tossed on to salad for dinner, what would you add to it?
A: 2 packages of trader joes barbecue pork tossed into the slow cooker on low for 1 hour.
while that's heating up i take trader joes frozen french green beans (rinsed) and prepare this deliciously roasted eating well recipe.
gives me more time for what i'd rather be doing, like catching up on my reading.
Q: what to be wearin' while you're preparin'?
A: fancy pants, of course.
Q:animal, vegetable, miracle...where have i heard that?
A: from ms. kingsolver..
adios and good day to you sir -
p.s. let me know how it goes
